This is that pellet grill you bought, right? Can't go wrong with a good Porterhouse or NY Strip. I'd probably sacrifice a couple semi-decent Sirloins first tho so you can figure out the hot spots and get a good feel for it.

Alternatively you could probably do some mean Brisket on that thing...

Did this last night with my pixel actually, the hot spot is the right, top right corner being the hottest and moving diagonally to the bottom left. When the baffle is open obviously the direct heat is the hottest spot but you are probably right I should cook shit first
